Tradition, culture, food and wine weave together in Bardolino. Saturday 10th and Sunday 11th November in Piazza del Porto the Bardolino Novello will be the absolute protagonist! From 10 am to 6pm you can taste the red wine and combine it with other typical autumnal product: chestnuts.

The Novello wine is not only a young wine, but it represents a particular type of wine. It come from a productive process with different characteristics compared to the normal alcoholic fermentation.

The bunch of grapes are put in steel containers that are saturated with carbon dioxide. Grape stays in these reservoirs for a period that can vary from one to three weeks, to a constant temperature of around 25-30 °. The contact with the carbon dioxide leads to the grape’s intracellular fermentation and the conversion of sugars to alcohol.

This wine has a particular ruby-red colour; an intense and characteristic perfume; a dry, soft, savory, slightly acidic and fresh taste, sometimes it is a slightly sparkling wine.

The Bardolino Novello was the first young wine to get the certification DOC in 1987. You can combine it with meats, soups and fish fry, but particularly with the roasted chestnuts during St. Martin day.
