The cuisine of Lake Garda has been enriched in recent years by a valuable discovery: the truffle. It can be found in the mountain areas on the west bank of Lake Garda (the “Alto Garda Bresciano”), on the Monte Baldo and on the morainic hills of Lake Garda. Here you can find and taste the most popular truffles. The precious black truffle has a pleasant and intense aroma and it is particularly well digestible, which makes it one of the most popular truffles after the white one. Its shape is tubular and its size varies from that of a nut to that of an apple. It usually matures between November and March. The black summer truffle (“Scorzone”) and winter truffle (“Trifle nera”) are slightly less appreciated, but still often used in local cuisine. The precious white truffle – which can also be found around Lake Garda – is the most famous and most popular truffle in Italy. Among the edible truffles, it is the largest and can be irregularly rounded or tubular. Its shell is smooth and white-yellow. Its aroma is intense and pleasant and its pulp is delicate and easily digestible. It is usually found between October and December.
