Polenta and salt cod is a very tasty recepy, savory and delicate, that can be easly prepared with few and simple ingredients. Even though in the past it was a “poor people food”, like it’s main ingredient, this dish will surprise you with its taste and peculiar consistency.

Clean the cod, slice it in tiny pieces, dip it in flour. In a casserole fly slighly in oil some cminced shallot, then add chopped tomatoes, salt and pepper. Let it stew for 10 minutes, then add the cod pieces. Put the casserole on a slow heat for 20 minutes and then sprinkle it with minced parsley.

In the meantime prepare the polenta. Pour into salted boiling water the cornmeal and stir for 40 minutes until it is ready. You want to obtain the consistency of a thick porridge. Pour the polenta on the dish, cover it with the codfish and enjoy your meal!
